  • 2 tsp sea salt
  • 2 tsp pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp paprika
  • 1 tbsp chili powder (optional for a spicy kick)
  • For the Spicy Ranch
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup buttermilk
  • 1-2 chipotle peppers in adobo sauce, finely chopped (adjust based on your heat preference)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp dried dill
  • 1 tsp dried chives
  • 1 tsp dried parsley
  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • Juice of half a lemon

How to Make It

For the Chicken Wings


Rinse the chicken wings and pat them dry with paper towels.


In a large bowl, mix the baking powder, salt, pepper, garlic powder, onion powder, paprika, and chili powder. Add the chicken wings and toss to coat evenly


Preheat your smoker to 180°F (82°C)


Arrange the wings on the smoker racks, ensuring they do not touch to allow for even smoke circulation. Smoke the wings for about 1 hour to infuse them with a smoky flavor.


Increase the smoker's temperature to 450°F (232°C) and cook the wings for an additional 5 minutes to crisp the skin. Remove the wings from the smoker and serve with spicy ranch dressing.

For the Spicy Ranch


In a mixing bowl, blend the mayonnaise, sour cream, and buttermilk until smooth. Add finely chopped chipotle peppers and a teaspoon of adobo sauce to the bowl. Mix in garlic powder, onion powder, dill, chives, parsley, salt, and black pepper. Squeeze in the juice of half a lemon and whisk everything together thoroughly


Refrigerate the dressing for at least an hour to allow the flavors to meld
