Paleo Chinese Chicken Salad

  • 4 cups Shredded lettuce
  • 2 cups Shredded red cabbage
  • 2 cups Shredded chicken
  • 2 cups Navel or canned mandarin oranges, sliced or drained
  • 1/2 cup Carrots, shredded
  • 1/3 cups Green onion, sliced
  • 1/4 cups Almonds, sliced
  • For the Dressing
  • 2 tbsp Rice wine vinegar
  • 4 tbsp Coconut aminos
  • 1 tbsp sesame oil
  • 1 tbsp Extra virgin olive oil
  • 1 clove Garlic, minced
  • 1 tsp Ginger, minced

How to Make It


In large bowl, toss together lettuce, cabbage, chicken, mandarin oranges, carrots, green onions, and almonds.


In a small bowl, whisk together rice wine vinegar, coconut aminos, sesame oil, olive oil, garlic, ginger, and salt.


Drizzle dressing over salad. Toss to combine, then serve.
