  • 1/4 cup olive oil
  • 4 cups sliced mushrooms (mixed varieties)
  • 3 cloves garlic
  • 2 tsp miso paste
  • 1/4 tsp red pepper flakes
  • 1 tsp sea salt (plus more to taste)
  • 1 tbsp rice vinegar
  • 3 tbsp tamari
  • 4 cups vegetable broth
  • 1 cup water
  • 2 cups chopped swiss chard
  • 100-150 grams soba noodles, cooked
  • Toppings: Sprouts, green onions

How to Make It


Heat a large pot over medium heat and add the olive oil. Once hot, add the chopped mushrooms and cook for 8-12 minutes, stirring sparingly, until all of their water is released and they start to turn golden brown.


Stir in the garlic and ginger and cook for 1-2 minutes, until fragrant. Add in the miso paste, red pepper flakes, rice vinegar and tamari, stir and cook for 2 minutes.


Add the vegetable broth and bring to a simmer over high heat. Once simmering, turn to medium low and keep at a simmer with the pot partially covered for 10-12 minutes. While the soup is simmering, cook the soba noodles and set aside.


Once the soup has simmered for 10-12 minutes, turn the heat off and taste. Adjust seasoning with salt if desired.


Serve the soup by adding soba noodles and swiss chard in a bowl and ladling the soup overtop. Top with sprouts and sliced green onions.
