Mushroom and Spinach Savory Oatmeal

If you are someone who prefers savory for breakfast then this is for you. Similar to risotto with the health benefits of oatmeal.

Mushroom and Spinach Savory Oatmeal


  • 1 1/2 cups water
  • 1 cup oatmeal, gluten free certified
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cups mushrooms, sliced
  • 2 cups spinach
  • 1/2 teaspoon thyme
  • salt and pepper, to taste
  • Optional
  • 2 eggs, fried
  • fresh thyme sprigs

How to Make It

Bring water to a boil in a pot. Pour in oatmeal, reduce heat to a simmer, and cook for 5 minutes uncovered or until oats have reached desired tenderness. Meanwhile pour oil into a saucepan over medium heat and bring to a simmer.

Add onion and garlic and sauté for 3 to 5 minutes. Add mushrooms, spinach and thyme and saute until mushrooms turn golden brown, about 5 to 7 minutes.

When oatmeal finishes cooking, remove from heat and scoop into pan with vegetables and mix thoroughly. Transfer to serving bowls and add olive oil, salt, and pepper to taste. Add fried egg if doing so and garnish with fresh thyme.
