Grilled Zucchini Salad with Lemon-Basil Dressing

Grilled Zucchini Salad with Lemon-Basil Dressing

  • 2 Zucchinis, halved
  • 1/2 cup Walnuts, toasted
  • 1 cup Celery, chopped
  • 5-6 cups Romaine lettuce, chopped
  • 1/2 cup Parmesan cheese, shredded
  • Lemon herb dressing
  • Juice from one lemon
  • Zest from one lemon
  • 2 Garlic cloves, pressed
  • 2 tbsp Basil, chopped
  • 1/3 cup Olive oil
  • Salt & pepper to taste

How to Make It


Preheat the grill to medium-high heat.


Slice the zucchini in half lengthwise. Drizzle with olive oil, pinch salt and pepper on both sides. Once the grill is hot, grill on medium high heat, until nice and charred, about 5 minutes per side. Set aside.


Prepare the rest of the salad ingredients and add to a bowl. Slice the grilled zucchini into half-inch pieces and add to the salad bowl.


Whisk together the salad dressing ingredients or add to a jar and shake to combine. Drizzle the dressing ingredients over the salad, toss and enjoy!
