Ingredients

  • 2 cups Kaslo Sourdough Classic Sourdough Radiatori
  • 2 cups Broccoli, cut into pieces
  • 2 cups Cauliflower, cut into pieces
  • 1 Red pepper, chopped
  • 1/3 cup Red onion, diced thin
  • 1/3 cup Buffalo milk feta cheese
  • Dressing
  • 1/2 cup Olive oil
  • 1/4 cup Red wine vinegar
  • 1 clove Garlic, minced
  • 1 tbsp Dijon mustard
  • 2 tsp Maple syrup
  • Salt & pepper to taste

How to Make It

1.

Cook pasta according to package directions. Drain, rinse, and set aside to cool (or place in fridge to cool faster).

Chop cauliflower, broccoli, red pepper, onion, and crumble feta cheese. Place in large bowl.

Add dressing ingredients to a jar and shake until combined.

4.

Add cooled pasta to remaining ingredients in the bowl and add a desired amount of dressing (might not need the full amount). Mix well and serve immediately or place in fridge before serving.
