    Zoodle Carbonara

    Zoodle Carbonara

    4 Zucchinis spiralized
    1/2 Med Yellow Onion
    5-6 slices Bacon cut into chucks
    2 cloves Minced Garlic
    2c Whipping Cream
    pinch Xanthum gum
    1c Milk
    1 pinch Nutmeg
    1 1/2tsp Salt
    1tsp Thyme, fresh and chopped
    4 Egg yolks
    1/4c Parmesan shredded
    1/2 Lemon, juiced



    1.   Using a Spiralizer, spiralize the zucchinis and set aside
    2.   In a pan cook off the bacon until crispy. Remove the bacon and leave the bacon fat in the pan.  
    3.   Take your onions and garlic and add them to the bacon fat and on medium heat cook until translucent.
    4.   Add a pinch of Xanthum gum and slowly add the cream and milk while whisking.
    5.   When the mixture begins to boil, add the zucchini noodles and cook for 1 minute.
    6.   Take the pan off the heat and add in the remaining ingredients while mixing.
