    Salmon Cucumber Cups

    Salmon Cucumber Cups

    Servings: 18-24

    Prep Time: 20 minutes

    Cook Time: 20 minutes

     

    Ingredients

    Cream Cheese Filling
     
    250g Cream Cheese
    1/4c Sour Cream
    1T Lemon Juice
    2T Whipping Cream
    2T Fresh Dill Chopped
    1t Salt
     
    Combine all ingredients using a food processor or a mixer until fully incorporated and smooth. Let sit overnight.
     

     

    Instructions:

    Assemble Cucumber Cups
     
    2 Cucumbers
    1 recipe Cream Cheese Filling
    1 pkg Smoked Salmon
     
    Cut cucumbers into half-inch slices. Using a melon-baller scoop out the center of the cucumber slices, make sure you only scoop halfway down. Add the filling to the center of the cucumber and top with half a slice of smoked salmon.
