    Nuts to You Cyclist Energy Bar

    Nuts to You Cyclist Energy Bar


    Servings: 8

    Prep Time: 10 minutes + 3 hours

    Cook Time: 8 minutes



    1 cup  Mixed Nuts, roasted roughly chopped (almonds, brazil nuts, hazelnuts, cashews, pecans)

    1 1/2 cup  Quick Oats, uncooked

    1/2 cup  Honey or Maple Syrup

    1 cup   Almond Butter (can be replaced with peanut butter if desired)

    2 tbsp  Coconut Oil, melted

    1/2 tsp  Salt

    5 tbsp  Dried Cranberries or Raisins

    4 tbsp  Dark Chocolate Chips

    3 tbsp  Hemp Hearts

    2 tbsp  Black Chia Seeds




    In a medium bowl combine the dried ingredients: roughly chopped nuts, quick oats, salt, dried cranberries, chocolate chips, hemp hearts and black chia seeds. Set aside.

    In a small pot combine the nut butter, coconut oil and honey. On low heat, mix together until the coconut oil is melted and the mixture is emulsified, the mixture should not be hot to touch. DO NOT BOIL. 

    Pour the nut butter mixture over the dry ingredients in the medium bowl, mix until combined. Press the mixture into an 8x8, let the bars set in the fridge for 2-3 hours or over night
